This barista milk comes from very special cows - the Jersey dairy cowsThey originally come from the Channel Island of Jersey. Their coats are typically caramel brown and their noses white. Unlike the milk of a conventional Holstein cow, Jersey cow milk is naturally richer in vitamins, proteins, minerals, and fat. This is precisely what distinguishes it from all other milks. Because it has a fat content of a full 6%. And as we all know, fat is the best flavor carrier there is. This makes it incredibly creamy in taste, and the milk foam it produces is the best you've ever seen.
Posture and nutrition
In the entire Netherlands, only about 3,500 Jersey cows graze on the farms of farmers who have joined together in a Jersey milk trading cooperative. By comparison, there are 1.6 million Black and White Holstein cows, which are also common in Germany. The Jersey cows live on pastures and fields throughout the Netherlands. You can even visit the farms during one of the many open days. Since the feed is crucial for the taste and quality of the milk, the farmers always ensure a wide variety of different grasses and herbs in their pastures. This ensures the cows receive a good mix of healthy nutrients, Vitamins and minerals.
Holland Jersey milk is officially certified pasture milk. This means that the cows graze in the pasture for at least 120 days a year and at least 6 hours a day. The optimal temperature for cows is between -7°C and 17°C. If they get too cold, they prefer to go into the barn. But they also dislike excessively warm temperatures, as this causes them heat stress. Unlike humans, cows cannot sweat. Understandably, they prefer to lie in the shade and move around as little as possible. Jersey cows also prefer to go "home" to ruminate and digest their food in peace and quiet. The farmers prefer to open the doors whenever possible so that the cows can decide for themselves where they want to be.
